Apriena’s Butter Chicken

Glug of coconut oil 

1kg deboned chicken thighs or breasts (cubed)

1 red onion chopped

50 grams crushed almonds

50 grams crushed cashews

1 teaspoon crushed garlic and ginger paste 

2 tablespoons of “Pri Made Butter Chicken Spice”  * See note 

half a glass of water

250 grams crushed tin tomatoes

250ml cream 

juice of half a lemon (small)

handful of fresh coriander leaves

 

 

 

Heat oil in your pot. Flash fry your chicken just to seal and brown it. 

Remove the chicken from the pot and set aside.

Add onions and allow them to start to caramelise

Once they have caramelised add the garlic and ginger paste.

Add your “Pri Made Butter Chicken Spice”

Add a dash of water so that the spice does not burn

Add your tomatoes, cashews, almonds and cream. 

Allow to simmer for 5-8 minutes 

Add your chicken and cook until tender. 

Garnish with coriander and squeeze the lemon juice into the curry, stir and Enjoy!!!!
